As part of my health coach training, I learned the importance of healthy eating. Cooking fresh, local, organic food nourishes not only your body, but your mind and soul as well. If we cook from the heart with love and joy for what we are doing, we are giving the gift of life to ourselves and everyone who we cook for.
It just isn't Fall without a few of mom's apple pies! My mother never measured anything. It was always just a handful of this and a handful of that. It drove me crazy!!!
Mom's Apple Pie
Ingredients:
· About 6 baking apples. I like Macintosh!
Flour
Sugar
Cinnamon
Brown Sugar
1/4 cup water
4 or 5 small pats of butter
Your favorite brand of pie crust.
Directions:
Begin with a frozen pie crust. Take a handful of flour and and drop it into the pie crust. Next take a handful of sugar and toss it into the pie crust. Shake a nice amount of cinnamon onto the mound of flour and sugar. Use your finger (mom did!) to mix the flour, sugar, cinnamon mixture. It should cover the bottom of the pie crust.
Peel the apples and arrange them in a circular pattern around the outer edge of the crust. Keep going until the entire crust is filled. It takes about 6 apples per pie. Next pour 1/4 cup of water over the pie. Take another small handful of sugar and sprinkle it over the apples. Add a handful of brown sugar and sprinkle that over the apples. Sprinkle more cinnamon on top of all that. Add 4 to 5 small pats of butter on top of the pie. Bake for about 45 minutes at 375 degree or until apples are soft. Serve with ice cream and say "Yum!"
For me, one of the most enjoyable parts of my life is being able to have friends over for a wonderful meal and gathering. I love planning the meal, shopping for the ingredients, cooking up everything to perfection and then watching their smiles as they enjoy a great meal. It's so much better than cooking just for yourself.
