As part of my health coach training, I learned the importance of healthy eating. Cooking fresh, local, organic food nourishes not only your body, but your mind and soul as well. If we cook from the heart with love and joy for what we are doing, we are giving the gift of life to ourselves and everyone who we cook for.
Wanna live to be 100 like the people in the "Blue Zones"? Then make this soup part of your meal prep throughout all seasons!
BLUE ZONE LONGEVITY SOUP
Vegetable Minestrone
INGREDIENTS
•1 cup of black beans
•1 cup of kidney beans
•1 cup of navy/white beans
•1 cup of sweet corn
•7 tablespoons of extra-virgin olive oil
•1 cup of chopped white or yellow onion
•3 medium carrots peeled and chopped
•4 medium celery stalks chopped
•1 cup of fennel chopped
•2 leeks sliced
•5 mushrooms sliced
•4/5 garlic cloves chopped
•8 medium tomatoes chopped or use canned crushed tomatoes
• 1 small sweet potato chopped
•1/2 cup loosely packed fresh Italian flat-leaf parsley leaves
•1/2 cup fresh basil leaves
•6/8 cups of vegetable broth
•2 tablespoons tomato paste
•2 bay leaves
•salt and pepper to taste
•teaspoon of each oregano, turmeric, Italian seasoning or seasoning’s to your taste.
•coriander and avocado for toppings
DIRECTIONS
Start by sautéing the garlic and onions in olive oil until clear over a medium heat. Add the celery and carrots stirring often for about 5 minutes. Stir in the fennel, leeks, tomatoes, and whatever other vegetables you have chosen as well as the beans. Add enough water/stock 6/8 cups so that everything is submerged by 1 inch plus all your herbs and seasonings, I add the salt at the end.
Raise the heat to high and bring to a full boil, lower the heat and simmer for about 40 mins or until the vegetables are tender.
For me, one of the most enjoyable parts of my life is being able to have friends over for a wonderful meal and gathering. I love planning the meal, shopping for the ingredients, cooking up everything to perfection and then watching their smiles as they enjoy a great meal. It's so much better than cooking just for yourself.
