As part of my health coach training, I learned the importance of healthy eating. Cooking fresh, local, organic food nourishes not only your body, but your mind and soul as well. If we cook from the heart with love and joy, we are giving the gift of life to ourselves and others. Come join us at the table!
This pizza is a real delight to the taste buds. Although it is show with blueberries, feel free to substitute other fruits in season such as peaches.
• pizza crust (I use sourdough pizza crust)
• 1 teaspoon olive oil
• 1 cup thinly sliced red onion
• Kosher salt
• Pinch of red pepper flakes
• 2 tablespoons honey
• ½ cup ricotta cheese
• ½ cup feta cheese
• 1 cup blueberries
• Micro arugula or regular baby arugula
Goat cheese is optional for topping
1. Preheat the Oven: Preheat your oven to 400°F (200°C)
2. Caramelize the Onions: In a pan, heat olive oil over medium-low heat. Add the sliced red onion and season with a pinch of salt and red pepper flakes. Cook for about 3-5 minutes, then stir in honey and let the onions caramelize. Remove from heat.
3. Prepare the Cheese Mixture: In a small bowl, combine ricotta and feta cheeses. Spread the cheese mixture evenly over the pizza crust.
4. Assemble the Pizza: Top the cheese with the honey-caramelized onions and sprinkle the blueberries over the top. Sprinkle goat cheese crumbles over blueberries if desired.
5. Bake: Bake the pizzas in the oven for about 10 minutes or until the cheese has softened, the blueberries are nearly bursting, and the crust is toasted.
6. Finish and Serve: Remove from the oven, sprinkle with fresh arugula, and serve immediately.

For me, one of the most enjoyable parts of my life is being able to have friends over for a wonderful meal and gathering. I love planning the meal, shopping for the ingredients, cooking up everything to perfection and then watching their smiles as they enjoy a great meal. It's so much better than cooking just for yourself.
But what if you don't enjoy any of that?! Then you need my help. I can work with you one on one at your location to head you on the path to a healthier lifestyle; or you can attend one of my gatherings, which I love to call "Souper Sundays"
These are wonderful culinary classes. I have a limit of 10 cooks per class. In each class we make two soups, one fabulous type of salad, one side dish and a dessert. I have appetizers for everyone before class as well as wine and nonalcoholic drinks. No one leaves hungry!! Each class is designed around the participants and what is fresh, local and organic at the time. I always create the menu to accommodate vegans, vegetarians, gluten sensitivites etc. so I don't firm up a menu until I know what types of people are registered. I may sound vague, but it's the best way to meet the needs of everyone.
Each class starts with an informat chat over appetizers, then cooks are paired in teams of two. Each team prepares one of the dishes according to the recipe and ingredients provided. After everyone is finished cooking we sit and have a wonderful meal together. There is always a parting gift as well. I have women who are great cooks and women who hardly cook at all, but everyone enjoys the energy that comes from women cooking together!
I've offered sessions to Girl Scout troops, book clubs, and at women's retreats. Life is too short to not enjoy cooking and there is magic when people cook together!
